We did a fantastic bike tour in California earlier this summer (Sierra to the Sea, http://www.sierratothesea.org/). It was organized by the Almaden Bicycle Touring Club out from San Jose. Pretty challenging but rewarding terrain. Some bumpy roads but these kept us out of traffic. Highly recommend it. Anyone interested might be interested in the youtube videos that we uploaded...
